Need to make dinner for me and the wife. Have a lot of chicken breast, but I've BBQ'd the last few nights, and want something different.

Any good suggestions? I'm allergic to onions, and can't eat anything with vinegar.

Something similar to this is one of my go-to's for chicken. I use mozzarella and parmesan cheese instead of swiss cheese, and pan fry the mushrooms in a little bit of the stock before throwing them on the chicken. It's not too elegant, but it tastes great and is relatively quick to prepare.
