Need to make dinner for me and the wife. Have a lot of chicken breast, but I've BBQ'd the last few nights, and want something different.
Any good suggestions? I'm allergic to onions, and can't eat anything with vinegar. _________________

Something similar to this is one of my go-to's for chicken. I use mozzarella and parmesan cheese instead of swiss cheese, and pan fry the mushrooms in a little bit of the stock before throwing them on the chicken. It's not too elegant, but it tastes great and is relatively quick to prepare. _________________
