Both are very good and fairly realistic. I'd like to address OT & CB earlier than what you have slotted but otherwise good job!!

No to a traditional TE.

YES to a weapon like Fleener who can line up all over the field and cause mismatches.

Fleener is like a blend of Gronk [size and hands] and Hernandez [routes and speed].

Plan A is a little unrealistic as the WRs will both go in round 1 and Coples will not make it to 19.
